In the world this figure is approximately 2.5 billion animals. A person far from production may have a question: isn’t it possible to raise roosters for meat? Or, in the end, again remember humanity and gender inequality?
Shops and markets offer chicken meat. This is most likely a general term. Personally, I have never seen the inscription on the price tag: “Rooster meat.” Once I was treated to the “fresh meat” of an adult chicken, which, due to the lack of ladies in the home chicken coop, was no longer in demand. I cooked it on the stove for an hour and a half, but couldn’t eat it. The meat resembled rubber and was not chewable at all. Mom joked: “Petrukha was athletic, all muscles.” From childhood I remember how my father plucked a rooster in front of me. The carcass had a blue tint, the paws had spurs, and then I was afraid to eat the broth made from this “monster.” Then, of course, I didn’t burden myself with problems like: “I wonder, except on a private farmstead, are roosters raised on an industrial scale and eaten?”, “Is only the meat of young animals edible?” or “Are Ryaba and Petrukha legs different in taste?” Now I decided to deal with these issues.
I WILL START with the “killing” of the “boy” chicks. Of course, I've heard about this before. But, as it turned out, they are disposed of only at poultry farms for egg production. Forgive me, cockerel chickens of the laying hen breed are useless in such a production. Naturally, they cannot lay eggs, and raising them for meat, as it turns out, is not only costly, but also extremely unprofitable.
Specific example. Poultry farms where egg production is established and there is no parent stock are forced to purchase day-old chicks. I talked about this topic with the director of the Oranchytsy poultry farm, Teresa Dybul, and the chief veterinarian of the Soligorsk poultry farm, Vladimir Shalkovich. Chickens are sorted by sex before they arrive at the factories. To tell the truth, I never thought that such babies were somehow different in appearance.

We purchase day-old chicks from Belarusian and Russian poultry farms. And no matter how carefully we sort them, we still find a certain number of cockerels in our possession after 30-40 days. Let’s say that for 200 thousand chickens in a factory, 100-150 are roosters. They are disposed of and used for the production of meat and bone meal. Meat and bone meal is a high-protein protein-mineral animal feed obtained from carcasses that are unfit for food and dead animals. A couple of roosters are still left in Soligorsk poultry houses. Therefore, most often the same poultry farms use it to feed their own poultry stock.
USUALLY in egg production they keep purebred birds that can produce more production than ordinary laying hens. Brown crosses of the High Line, Tetra and Highsex Brown breeds are chicken hybrids. You can get about 320-350 eggs from one head per year. Cross-breed chickens, “boys” and “girls,” differ in the color of the feathers on their wings. Personally, although I grew up in the village, I had no idea about this, and the birds in my parents’ yard were only black, motley and red. Of course, not crosses, my mother just didn’t like whites. And I distinguished the chicks by their combs: in the cockerels they grew faster, and this happened much later after their birth. Now knowledgeable experts have enlightened me: brown cross hens have brown wings, while cockerels have almost white wings. It’s probably easier with people of color. White cross chicks, such as the Dekalb breed, can be sorted by the small flight feathers on their wings. Another interesting method that can be useful even for owners of pets. You need to turn the day-old chick upside down with its paws: the hens will press the head to the body, while the cockerels will hang it with their beak down. Yes, laying hens also have their own time. After she stops laying eggs, she is allowed into the soup set. The carcass is also “sporty”, somewhere between a kilo and two hundred kilos.
Sorting by gender is absolutely unimportant in enterprises where chickens are raised for meat. On the contrary, the birth of cockerels in incubators is very welcome. According to Sergei Ramchenko, director of Smolevichi Broiler OJSC, they grow faster and the higher the percentage of roosters in the poultry houses, the greater the weight gain and, accordingly, the profit of the poultry farm. So the benefit from the “guys” in this case is more obvious, and broiler meat does not differ in taste between the opposite sexes. And you can cook anything from it, not just broth.
Is there an alternative to disposing of laying hen “boy” chickens? Can this gender injustice be prevented before the chick even hatches? In sheep, for example, sperm can be sorted by sex and a female can only be impregnated with the desired sex. In birds, sex is determined not by sperm, but by the egg. Unfortunately, it is not yet possible to program the sex of future avian offspring. Leading scientists are trying to solve the problem. Research is being conducted to find a way to determine the sex of chicken embryos even before the fluffies hatch from their eggshells.

Whether this is good or bad, it is firmly rooted in my mind: livestock have precisely this purpose, which took root in primitive times. But I will be sincerely glad if scientists, and absolutely no matter whose ones, find a way, if not to save the lives of small cockerels from laying hens, then at least to prevent their unprofitable birth in incubators.

What should be in the diet
The cockerel will actively gain weight if it eats properly and fully. The diet for fattening should include:
- fresh herbs;
- vegetables;
- grain mixtures.
It is allowed to feed the meat cockerel with fresh waste from the owner's table. In this case, the diet will be more varied. And the farmer will be able to save money.
But when using table waste, it will be difficult to maintain the proportions of nutrients necessary for a complete diet of males. With such a menu, it is imperative to use vitamin and mineral supplements to enrich the food.
Protein and animal feed
Cockerels require large amounts of protein food for fattening. So that they gain weight faster.
The diet should include finely chopped boiled eggs, granular cottage cheese, and kefir. It is important to add food of animal origin: meat and fish waste, meat and bone meal, fish meal, earthworms.
Compound feed
There is another option - using purchased or homemade feed. This is a mixture of grains, cereals, yeast, fish and bone meal, meal, herbal meal, salt, and vitamin supplements. All ingredients must be finely crushed.

How to properly cook a rooster
To prepare a homemade rooster for 1 kg of meat, you need 2 liters of water, one onion and carrot each, 2 bay leaves, 4 black peppercorns. Cooking time ranges from 40 to 60 minutes per 1 kilogram of carcass, depending on the age of the bird. Adding spices and vegetables will help remove the specific smell of a domestic rooster, as well as get a fragrant broth and juicy meat.
- The rooster carcass is divided into parts, washed under waste water, placed in a deep saucepan, filled with cold water and brought to a boil over medium heat.
- After boiling, reduce the heat and remove the foam from the surface of the water.
- Add salt, spices, onions, peeled but not chopped carrots to the water and continue cooking.
- Monitor the volume of water, adding boiling water if necessary.
- After the time has passed, the rooster is checked for readiness. Properly cooked meat should be soft; when pierced with a fork, the protruding liquid should be transparent, without blood.
- The cooked rooster is left to steep in the pan for 20 minutes to make the meat more juicy and tasty.
The broth can be served separately; it is recommended to combine the meat with vegetable stew or rice pilaf.
How to organize fattening
If there are many roosters living in a chicken coop together with laying hens, the latter need to be fed separately. Feeders should be placed approximately 50cm off the ground to prevent hens from eating the rooster's food. Males are always fed first.
Several schemes for feeding roosters are used. You can fill the feeders 3-4 times a day so that the fattening males feed at the same time. Or give plenty of dry food. And twice a day, supplement the bowls with herbs and wet mash.
Newly hatched bettas are given food 8 times a day. Adult males are fed every 6 hours.
Therefore, if there are a lot of roosters in the chicken coop, the first fattening option is preferable.
How to cook rooster meat?
As already mentioned, if you cook rooster meat correctly, it will not be tough. Many housewives wonder what to cook from this ingredient?
First of all, I would like to note that rooster meat makes excellent jellied meat. There are a large number of recipes for its preparation, which are united by one factor: rooster meat for jellied meat should be cooked for at least eight hours, so that it later becomes soft and tender.
Rooster stew is also very popular. You need to simmer it in a frying pan with your favorite additives. Very often, rooster meat is stewed in cream sauce or sour cream.

Determining the age of the chicken
The age of chicken can be determined by the following characteristics: the amount of fat, consistency, strength of the breast bone, skin. A young chicken has a thin and tender creamy skin (an old one is rough and yellow), slightly pale yellow fat, a soft consistency, and an elastic breast (bendable, not stiff).
Also examine the paws. In a young bird they will have small scales, while in a mature bird they will have large scales and, possibly, growths. If you have a scallop, look for one with a bright red color. Chicken meat is particularly tender and has a pleasant taste.
Eat only natural, non-overfed chicken.
The most useful part of the chicken is the breast (low fat, high protein), and the most unsafe part is the legs, which can accumulate harmful substances obtained when raising poultry. However, if the chicken is completely “homemade” (natural), then there should not be any harmful substances in any part.
If a chicken has an unusually large breast, this may be a sign of feeding on special feed with growth hormones (hormonal devices, growth stimulants, etc.).
The healthiest way to cook chicken is to cook it. When making chicken broth, do not forget to skim off the foam. Foreign odors and suspicious turbidity in the broth may be a sign of the use of stale, low-quality chicken. If you still want to fry, then broiler chicken is best (tastier) for this.
If you are not sure of its naturalness, it is better not to eat chicken skin, because... chemicals accumulate in it. The same, but to a slightly lesser extent, applies to the liver.
Don't confuse a chicken carcass with a rooster carcass
Rooster meat is tougher and less juicy. The main differences: the rooster has paws with spurs, and the skin is thin and bluish in color. If you do buy a rooster, you can make wonderful jellied meat or broth from it.
It is not recommended to buy chicken frozen. It should be understood that frozen chicken meat is inferior in quality to chilled chicken. Muscle tissue loses its properties when frozen and becomes stiffer, not to mention the loss of nutrients. Moreover, the product often turns out to be imported, of unknown quality and manufacturer.
